Save a meal swipe, make a salad bar melt

Tired of eating on campus, but don’t want to waste that last meal swipe? Well, this melt is incredibly easy to make. And the best part is you can find all the ingredients at Collis Market and the salad bars at Class of 1953 Commons or Collis Cafe. Enjoy!

Ingredients

1/3 cup chopped broccoli
1 teaspoon olive oil
Salt and pepper
1/3 cup chopped mushrooms
1/3 cup red bell peppers
2 tablespoons sliced olives
2 thick slices of bread
2 slices of provolone cheese

Directions

Heat broiler. On a baking sheet, toss broccoli with oil; season with salt and pepper. Broil, tossing once or twice, until broccoli begins to char, 4 to 6 minutes.
Add mushrooms and bell peppers to sheet; season with salt and pepper and toss to combine. Broil, tossing once or twice, until vegetables are tender, 8 to 10 minutes more; set aside.
Top the bread with vegetables, and then add one slice of cheese to each slice of bread. Place on baking sheet, and broil until cheese is melted and lightly browned, 2 to 4 minutes.
